Archipelago Food is Rich in Nuances and Rich in Taste “Ikan Mas Arsik Khas Batak Toba”

Carp arsik fish, a typical Batak dish from North Sumatra, Indonesia, shows the richness of Batak culture and culinary delights. This dish uses carp cooked with traditional spices such as andaliman, turmeric, ginger, onions, red chilies, and lime leaves, as well as the typical kecombrang leaves. Gold arsik fish is often served in traditional ceremonies and religious rituals as a symbol of good luck and long life. The availability of raw materials is influenced by the environmental conditions of Lake Toba, the natural habitat of goldfish. This dish has become internationally known, served at global restaurants and food festivals, and appreciated by famous chefs. Arsik goldfish reflects togetherness, unity and cultural heritage that needs to be preserved, with the aim of appreciating and promoting the richness of Batak culinary delights and increasing awareness of the importance of preserving local culture. This writing involved a literature review and interviews with Batak culinary experts. The results of this paper also show that arsik carp is not only valuable as a culinary heritage, but also as an important element in the cultural and social identity of the Batak people.
